§ Sketch, Baking, Witch and Naming Her....


I have been really appreciating all the name suggestions for my witches. Y'all have come thru for me! Thanks. One in particular, which actually got me to reading the short story, was of a character named Ligeia, with the same title name. Thanks for "Nance" for the suggestion. I will probably use several from my blogging buddies. Ann, who suggested Raven and Ebony...great minds think alike. I have used those in the past years.

    Poe had a short story titled "Ligeia" (pronounced Lie-JEE-a) about a raven-haired lover who sickened and died. The man married later, and his wife took ill and died, but she suddenly began to exhibit signs of life. As he unwrapped her burial shroud, he was shocked to see that she had turned into Ligeia, alive again. Ligeia would be a great name for a dark-haired witch.

As much as I enjoy reading Poe, I too like to re-read Irving's Legend of Sleepy Hollow. Even long ago, I had on my bucket list to travel to Terry Town in New York and venture up a ways north to what used to be called North Terry Town, now changed to Sleepy Hollow. Anyway, I was thinking of getting out the Disney DVD [narrated by Bing Crosby] Sleepy Hollow and watch it soon. Instead I got my pencil and eraser out and sketched a simplified version of Icabod Crane...


If you have been online for as long as I have, you no doubt have seen, heard about, or even made these cookies. Lore has it that some woman actually paid $250 for a cookie recipe from Neiman-Marcus and then shared it by property right to those who visited her website. Of course I did. Long ago. And made them many times. Long ago...yep, long ago I lived off chocolate and caffeine. Not any more!! In fact I don't do caffeine at all. But, I thought of those cookies this past weekend, and came up with a brilliant idea to make them but with NO CAFFEINE white chocolate. They are just as addictive as the ones with the Hershey's chocolate. Well, almost. 
I copied and had the recipe from years back, but I'm sure if you search online for Neiman Marcus Oatmeal Chocolate cookie recipe you'd find it.



§ It Takes One Skillet and 30 Minutes...


Since a lot of bloggers are sharing recipes, I thought I'd do a post for one I've made for decades, and it is simply put...too easy. Anymore, I look for less time consuming dishes to prepare meals for just the two of us. And when I do make the main entree, I make sure I make enough for at least two left-over meals. This one is simple. I don't measure when I cook...I've been cooking since childhood with my mom, and know a 1/2 cup just by sight. Ask Bud, he's tested me before. No measuring, less dishes!! As my title says, it's only one skillet involved; after the pasta is cooked in boiling water that is.   And it's not an exact science to preparing...personal preferences are expected.  If you like onion, add more!  More chicken?  Add more.  Don't want meat...that's okay too. Like noodles instead of rigatoni?  Fine.

And it's really good. Just like spaghetti, it gets better and better when reheated. As I make this, when done, it will serve 8 easily!!


Here's what you need:


Chicken Stroganov


Cooked , drained Pasta [cover and set aside]

  • 1/2 to 1 large yellow onion [diced coarsely]

  • 1/4 cup of butter [margarine will do, but butter gives it more flavor]

  • 1 small can of condensed cream of mushroom soup [do not add water]

  • 1 large can of mushroom pieces [drained]

  • 1 small container of sour cream

  • 1 large can of chopped white chicken meat [or leftover cooked chicken breast, chopped]

  • 1 package of sliced provolone cheese [for serving]

  • Salt and freshly ground peppercorns for taste.


    In a large skillet, melt butter over medium high heat, add chopped onion and stir until onion is tender and translucent. Add drained mushrooms. Stir well. Lower heat. Add chopped chicken. Stir in soup - mix - slowly add [while stirring] the sour cream and seasoning.  Add cooked pasta, mix thoroughly...
    Simmer until well heated.

    In skillet, refrigerate mixture until serving. I use small, individual serving bowls...scoop up an individual serving for each. Place skillet back in refrigerator for another day. [will be good for 2-3 days! No more cooking for 3 days!!] Top individual bowls with a circle of provolone cheese. Reheat in microwave for 2-3 minutes [depending on wattage of microwave and amount in bowl]...at least until the cheese is melted.
    Also, can be a meal eliminating the chicken! We've had it meatless before, and it's just as good. I serve with pickled beets and tossed salad.  And white wine. 😊

    § Dumplings Anyone?


    Since we have had electricity for cooking, I've been craving comfort foods. I needed something that gave me a bit of happiness after this past week.  Even watching all these state-wide news briefings by our governor and electric big wigs, I remained dismayed at the whole world.  So.... One of Bud's favorite meals...I  made beef stew. Tho it's not really all that appealing to me, I do enjoy a good hot bowl of soup anytime of the year. And I pleased my man so it was all worth the effort. And kept my brain occupied without interruptions.  But before then, I made MY comfort food. And, naturally it's much more fatty and less healthy than stew, but oh such a treat. It's been YEARS since I've made it; from scratch, even tho most of my grocery supply has dwindled. And, yes, a favorite steamed veggie for me is brussel sprouts. So, two goodies in one meal. Yum.
     
    A Very large Kettle is needed for stove-top recipe...
     
    Stew chicken wings [I use 4] until the meat falls off the bone.  Remove all bone. Add de-boned chicken meat back to pot.
    To the broth, add a quart of boxed [purchased] chicken broth and freshly ground black pepper... and bring to a boil.
    Mix Bisquick© [dumpling recipe on box] and drop into boiling stew broth, lower heat to MEDium as to prevent scorching....cook uncovered for 15-18 minutes [depending on size of dumplings].  At the end of first cooking time, lower heat setting to LOW, cover, and cook 15-18 minutes.    Serve hot and steamy!!  Dumplings should be cooked thoroughly and dry in center,



    § Sit, Fetch, BARK!!


    Since my heart condition triggers SVT when I consume real chocolate [or anything with caffeine], I try to find something made of white chocolate which contains no caffeine when my sweet tooth says I 'gotta have something' to break the craving. Long ago, I used to make chocolate bark [candy] for the holidays. And everyone loved it. It is so easy even a child can make this and be proud to accomplish participating in preparing for Christmas. [Maybe even a Santa treat or a boxed gift for your letter carrier perhaps?]. Now-a-days there are so many flavors of baking chips. This time around, for Bud and me, I used a small bag of Nestle's White Chips [no cocoa, so no caffeine]. And for a salty sweet treat, I added lightly salted almonds to the bark.  This is our New Year's Day goodness this year. I'll have a couple of pieces, Bud will have the rest...he can eat anything.

    It only takes about 5 minutes from start to finish.

    You can just melt the chips in the microwave as they come out of the bag, but I always use a tsp of oil [or shortening] to keep the chips from seizing. The oil keeps the sugars from seizing...the oil is keeping it smooth while melting the chips. If you don't add the oil, the bark will be grainy textured. At least that is what happens to me....

    Okay. First, line a cookie sheet with waxed paper... In a medium to large bowl pour in:

    A small bag of chips [7.2 oz.?]

    add:
    i tsp. oil or shortening

    Melt at high for 30 seconds...take out and stir.
    Put the bowl back in the microwave and cook for another minute [depending on your microwave, it could be less time or longer time] Do not overcook.

    Take out, stir until creamy and lump-free.

    Pour onto papered cookie sheet, spread the mixture evenly.

    I topped my melted chips with lightly salted almonds [crushed with a rolling pin]. Press almonds into the mixture [I use a slightly dampened hand to keep the nuts from sticking to my hand]. Chill until well set. Break into pieces.



    Oh, I think I'll do a taste test for y'all to see if this is worthy of posting about it...
    Yep, sure 'nough, it is. Sweet, a bit salty, smooth in texture...delicious. Enjoy. And Happy New Year.





    § Treats and a Holiday Gnome


    Rarely, in the summer months do I use the oven. Even tho the A C is running at full speed, I just don't want to add heat in the house. So, when Bud and I want a dessert for dinner, I usually make up my own recipe for use of the microwave. Besides, the prep time and cooking is shortened by half or more. And, tho maybe NOT as good as that baked in an oven, it will suffice 'til winter sets in. This week, I had a couple of extra large bananas in the fridge that had been in there for nearly a week. The fruit itself was still good, but the skins were blackened. I had a large bag of pecans in the freezer from last year's crop....what else but a "quicky" banana nut bread? Here's the recipe [a screenshot file] I found online:




    I mixed all the ingredients together [-except for the salt, and poppy seeds!!  And used an extra large amount of pecans since we both like it 'heavy with nuts'-], used the hand mixer and made a smooth, but thick, cake batter....added the pecans, poured into an 8x8 square pan [sprayed with non-stick spray - you can use shortening and flour in the pan, dusted completely] and baked it in the microwave for 9 minutes. Using a toothpick to test for done-ness.

    It isn't too moist, but with a cold, icy, glass of milk, it's great.  Makes a tasty breakfast too!

    It's August....and if you have followed me for any length of time over the years I've blogged, you know in August the store, Tuesday Morning, has their seasonal witch dolls on sale! And I get there on the first day the displays are readied for the consumer! I bought only two this year. So far. Then, on Wednesday Bud and I went out to lunch and we stopped at T J Maxx's Home Goods to see if they had any Halloween stuff. The front door as we entered had "Your Halloween Haunt". Oh, goodie. Anticipation set in. Right off, I found a little witchy stuffed gnome. Grabbed it like a kid with a dime at the penny candy store!!! What next? Back near the center of the store, MORE witch dolls and gobs and gobs of great spooky things. Of course, I have eyes for only the witches for my collection...I bought one. I just may go back in September and see if anything different has been added. Total new: Three witch dolls, and one gnome...




    § You're Gonna Rise Up Singing....


    If I'd known you were coming, I'd have baked a cake!!




    Oh wait a minute.....I DID bake you a cake! I call it Mandarin Dream.



    I followed the box instructions, but instead of the cup of water it calls for, I substituted the fruit juice from the canned mandarin oranges and 1/2 the oranges [whipped into the mix as I combined all eggs, oil, and juice]. The other half or the orange slices were set aside [mashed coarsely] for topping with the cool whip 'icing'. Chilled, and served cold. Easy!!! And, delicious if you like these oranges. It makes a good, tasty summer treat at the end of your meal.

    And....While the cake was in the oven, baking, I got out my sketch pad and drew a simple outline of a palm tree...wishing I was on the beach at the moment! I then filled it in a bit and drew the fronds on the tree, scratched in the water lines a little and shaded the rocks on the horizon, and the small sail craft...finishing in no time. Speaking of art....last week I watched a program on Texas Country Reporter, and they had an artist show-cased.  His work was amazing.  I'm gonna try and copy his idea of painting sometime.  I need to find a framed work, so I can tear it out of the frame and do to it what he did. [of course his paintings were his original...I'm gonna be lazy and find one already painted by someone else.]  I will begin looking for something that would be an ideal piece of art soon.  And begin.  I may not like what I DO...so, I may not show it to anyone.  LOL




    All the while I was sketching, Bud was in the garage at his work bench adding extensions to our puzzle table. We use our dining room chairs at the table, and when we go in to work on the puzzle[s] our legs hit the bottom of the table bottom....we need to "lift the table up" a bit. Giving us more leg room. It worked like a charm. We are working on a Thomas Kinkade "The Lion King" right now. We recently finished another of his art....I like his best of all...small in dimensions, challenging, and takes us a while to do one. [those that are too easy, with large pieces gives us no stimulation!]

    § The Week AFTER Easter....


    Apparently, I had a screw loose. Good thing my older brother wasn't here when I noticed after I cleaned out the laptop and was picking it up to put it away in its proper place, he'd never let me down on that one. He always thought I was one watt short of a light bulb. Not to mention Bud! I won't go into detail, but just picture an arthritic man, rolling on the floor laughing and between gulps for air, he was stuttering "I wish Butch were here!" [Butch, being my brother -he and Bud were always cahootin' over something devilish]. And picture me just walking away, leaving him stranded and having to maneuver himself up to standing position.  Serves him right!!!! I'm all fixed now tho, and everything is locked in with no brain matter loss.  At least for now, I've had no ill side-effects other than a mild headache after all the screwing I did.

    The last four days I've been AWOB [absent without blogging]... working on the yard pelican statue. I couldn't work on it too long at a time since the morning sun was in my eyes and I couldn't see Didley Squat to paint very well. And by the time afternoon rolled around, it was too hot for me with no shade had. So, I painted about half an hour before sunrise [at first light] until it peaked over the neighbor's roof into my eyeballs. And I finished it. I wanted to get it done once I started on it 'cause rain is predicted this weekend. I did go ahead and attempt making it look like the more commonly seen brown pelican. I forgot to take a before photo before beginning, so I searched my blog for the white pelican..

    And I still haven't seen nor heard from Didley Squat. 


    Ms. G at Connections More shared a recipe for Sunshine Cake. Saturday, the day before Easter, we had some special-made mini cakes. They were called Egg White Cake...in the shape of an egg of course, white cake, candy coated and colored, with an egg white meringue center and sprinkles. Pretty good. But I couldn't wait to try her recipe. Everything in it was everything Bud and I like. Especially pineapple. Now to be truthful, I tweaked her recipe some for a bit more heart healthy dessert. I used only egg whites since I hafta watch my cholesterol intake, sugar free cake mix, and no sugar added cool whip, plus crushed pineapple in its own juice instead of heavy syrup. And I must say it was an Easter favorite for us! I made baked ham, buttered yams, and tossed salad along with steamed broccoli. We both had to go back and get a 2nd opinion on the cake tho!! Thanks. Ms. G!!!! I may add halved pecans on top of the cool whip topping next time...it was so close to pineapple upside down cake without the mess.

    § Anything Goes!


    The 'wet' season has begun! Most days, I'm stuck at home because of the threat of rain. When it does rain here, it pours!! It's rarely a good kind of rainfall that is beneficial to the plants and lawns....most times, the clouds break open and we are in a flood within less than a hour! So, I tend to spend time trying to figure out what to do with my waking hours. In the morning it's pretty routine...wake up, pet Isaiah and feed him fresh canned food, fill his water and dried food dish...then, check the hurricane website [lots of them out in the Atlantic right now], check the baseball scores [Houston Astros are number one in their division/league...but only a few more weeks before playoff season! and world series - the Astros don't have THAT big of a lead!!!], check the weather, read texts from family, take my Rx heart meds for the day. After all that, I then play my games on my smartphone [one game each of scrabble, tri-peaks, and cribbage apps, playing against the computer -notice the game shown here from a screenshot!!! I spelled THREE 7-letter words and scored a lot. Never done that before]...by that time, Bud is usually waking up and brewing his coffee. [no, I'm not a coffee drinker...never was] While he's snorting and coughing and slowly waking up, I make my breakfast. Either oatmeal, grits, or boxed cereal....Honey Nut Oaks and Clusters. Once that's done, and dishes are washed, it's planning my day. Dang, rain in the forecast again, no birding. I'll get on my stationary bike and put the pedal to the metal.

    Off and on, I've recently been working on my mountain scene pastel work that I started some time ago. For weeks, I just cannot come to a happy conclusion on it, and I ended up 'scribbling grass blades at the bottom of the stream to get it 'finished' and stored in my sketch portfolio. "Out of sight, out of mind". I'll stick to birds or flowers. I can at least make them look somewhat 'real' compared to this mess of color that I so many times wanted to give up on...it's titled "Dallas Divide Autumn." And, happily, I'm stashing this one away for good.



    For laughs, I bought the book of one of my favorite 'humorists'....Maxine!





    When I finished reading this in its entirety, I am in the middle of two books. One I started long ago [it''s a big, hefty, long book], and then, from reading Florence's review on another book, Mozart's Starling, I ordered that one from Amazon and when it was delivered a few days ago, I started reading that one also...VERY GOOD. I'll do a review on it when I complete it...near done now.


    One day, I spent a few hours cooking one of our favorite dishes. Chicken Teriyaki!



    I brown on high heat with Extra Virgin Olive Oil, chopped chicken thigh meat [boneless]---nicely browned & crispy on the outside!
    ...stirring frequently.

    When tender, I add Teriyaki Sauce [bottled - any preference]
    and then add about a pound of mixed vegetables and steam while I cook long grain brown rice.

    Serve over rice and our favoirte side dish ---chilled mandarin oranges.

    That about does it for this post. Yep it rained while I was working on this for publishing. I'll get suited up in my gardening clothes and go pull some weeds in the back yard while the roots are soaked and easy pulling! Then, shower,...watch the news, serve up a bowl of chili con carne that has been cooking in the slow cooker. Toss salad and prepare some garlic toast. Watch a movie, go read and then .... lights out!!!! Zzzzz--zzz-zz-z






    § Eat Your Vegtables!!


    Recently we dined for lunch at Cracker Barrel. We both had the daily special which was chicken breasts on a bed of wild brown rice. Of course, if you know the restaurant chain, the entrees come with two fresh side dishes of your choice from the menu. I always favor their green beans, so that was one I chose. The other was from the little display tablet on the table, advertising their newest side order...Kale Salad. It looked very good, and the description was just to my liking...everything mixed in the side dish are some of my favorites - dried cranberries, pecans, brussel sprouts, maple vinaigrette dressing with a beautiful dark green kale. When our orders arrived, the chicken and rice was piping hot...delicious. The beans of course, delicious with the old, home-style bacon bits! Then, the taste test....the kale. Out of this world delicious! Now I must confess, I've never ever in my life had kale to my knowledge. I've seen it on serving plates as a color adding feature with an orange slice....I've eaten the orange slice but never touched the kale. After all, it's a vegetable! And since mom always said "Eat your vegetables" I still to this day tend to be on the verge of defiance. "Nope. nope! If you say it's good for me, I'm not gonna do it!!"

    Next visit to the grocery store, I picked up all the ingredients to try and replicate the salad I had. I also went out on Google and researched the heart health benefits of kale. Guess what? It's good for you. In fact it is TOP in the World Health list of the best, healthiest foods!! Go figure. The kale works with your body's bile to burn the BAD cholesterol and adds to the GOOD cholesterol [which is essential to a healthy body battery...the pumper...the heart]  All this time, my mom was right...eat your vegetables. lol

    This is what I did, and it turned out pretty good. I had no idea the portion ratio of any thing, and I never measure stuff when I cook...

    I used:
    [all ingredients are approximated]

    1/2 pound of fresh, raw brussel sprouts [whole]
    1 large stem of raw curly leaf kale [about 2 cups] (cut)
    1 small package of chopped pecans
    1 cup of dried cranberries
    1/4 cup of maple syrup [the REAL stuff!]
    1/4 cup of sesame oil [I read a recipe online that uses olive oil]
    and a dash of dried mustard

    In a blender filled with water, I chopped at low speed the sprouts and kale. Drained this mixture in a colander.


    After the vegetables drained I placed in a large mixing bowl and added the cranberries and pecans. Then, mixed in the syrup, oil, and dried mustard.


    I then covered it and chilled to a cold temp and served as a side dish with pork chops and baked potato. I made brownie points with Bud. He liked it...I thought it needed more maple flavoring, so with the leftover salad, I added another 1/4 cup syrup. A sweet, complimentary salad with a crisp, crunchy texture that was good for the taste palate!!

    It's also loaded with a good portion of Vitamin K
    which is good for aged eyes/vision!!

    Okay, I'm sure you know the commercial with the two claw-footed bathtubs. Well, you won't see 'em here!! When I saw this couple on the beach, it's the first thing I thought of...But, guessing their ages, I then changed my thoughts to this:

    C. Alice: [texting her mate] "Dick? Did you take 'em?"
    Dick: [responding] "I can't remember!"




    ps...In 1942, when she was born, her mother named her Clarabelle Alice. As Clarabelle grew older, she legally changed her name to C. Alice 'cause everyone made fun of her name, Clarabelle!! Now...unforetold, her name change to C. Alice is giving her fits!! Should she get the courts to reinstate her birth name? What a dilemma.

    NOSTALGIC and SALTY SWEET!

    We have one Target store here in a strip mall. I was walking back to the car and their door opened to allow someone to exit, and the fragrance of their delicious popcorn made me stop, enter, and order a bag to munch on while going home. Well, I didn't eat too much 'cause I needed to pay attention to the traffic and keep both hands on the steering wheel. When I got home, I thought "Why not make what's leftover into popcorn balls?" I haven't had a popcorn ball in decades!!! In fact, I'm thinking the last time was for a Christmas holiday when my mother was still alive; she traditionally made two full recipes and added red food coloring in one batch, and green food coloring in the 2nd for seasonal colors...it had to be in the 1980s. So, I got out the ingredients, used my mother's recipe card that's been stashed away in a cupboard for a long time, cutting the recipe in half, and made me four popcorn balls!! Delicious. Sugary. Probably not all that healthy, but mighty tasty.  They're easy to make, very little time needed [about 10 minutes from start to finish].  Here is my mom's recipe:

    POPCORN BALLS

    Popped popcorn [about 6-8 cups fully popped]

    1 cup sugar
    1/2 cup light Karo™ Syrup
    1/2 teaspoon baking soda
    1 - 1/2 teaspoons margarine
    1/2 teaspoon cream of tartar [to be added later]
    food coloring [optional]

    Mix all ingredients except cream of tartar into a saucepan and bring to a boil over medium high heat. When full boil, add 1/2 teaspoon cream of tartar, mix well. Pour over cooled popcorn, stir until all popcorn is well coated.The secret to make balls simple and not sticky on your hands...keep your hands moist with tap water...form into balls.

    Allow to dry out somewhat before storing in bags. OR BETTER YET....eat 'em all gone in one sittin' for a sugar high you won't soon forget.

    One full batch will make about 8 balls depending on the size* you form. And you thought I'd say the size of your balls didn't you. I think not. I'm not that uncouth. I do have some manners to follow [sometimes!]

    § Rudelle and Rudy [or maybe Rudi!]


    In my previous post I mentioned how cold it was the past week, and even tho I'd prefer to be outdoors, I did stay home and tried to keep myself busy by reading, laundry, cleaning a bit. And making a traditional December treat for us. My whole family loves 'em. And yes, it's been a Christmastime tradition since I was a young girl. Mom used to make them also. One day, I figured it was close enough to the holiday to have them around for us to snack on. It's our late night 'before going to bed' treat. A rice krispie bar and a glass of icy cold milk.

    Nueces River - Behind the Trees

    I also mentioned in my previous post that while I was walking the bluff at Bazemore Park, I soon dropped down into the hollow below, where there are open fields, a couple of ponds and picnic areas, all near the river bank.  Driving the park's loop before parking the car at the boardwalk, I spied a mama white tailed deer. I shot her!! Through the lens that is. And, from the car window so not to startle her and make her feel threatened....





    ...she spied me and soon disappeared into the dense woods for cover.


    At the boardwalk I parked and got out to walk. Reaching the boardwalk, I was startled somewhat by ME startling the yearling white tailed deer. I lifted my camera, but all I could see in the viewfinder was the white tail bounding through the tawny colored brush that made the photo op no good...the color camouflage of the deer didn't make much of a clear image!! Further walking, I kept my eye out for the young one to my left. THERE!!! In the trees!! It has stopped, turned to face me and watch my every move. As I lifted my camera to focus, the deer jerked as if to seek deeper cover. But...no it once again became motionless and I SLOWLY did my 'work' on shooting it!! Then, I zoomed in, shot it a few more times to be sure I got it...and then, it turned and left...




    ...I call him "Scarface" - 'cause of the scar on his nose.
